All Day Chicken (Slow cooker)

Crock Pot All Day Chicken

Ingredients

2 tbls Frozen orange juice
2 cups Chicken Stock
1 teaspoon Salt
1/4 teaspoon Pepper
1/2 cup Tomato paste
2 tbls Soy sauce
2 tbls Brown sugar
2 Cloves garlic, minced
1 dash Allspice

Remaining ingredients

4 lbs. Chicken, breasts and thighs
1/4 pound Mushrooms, sliced
2 tbls Margarine or butter
11 ozs mandarin orange sections, drained
1/2 medium to large bell pepper, sliced lengthwise
1/4 tsp Ground ginger
3 tbls Cornstarch
1/4 cup Cold milk
1/4 cup Cold water

Directions

Marinade: The night before you plan on slow cooking your dinner, mix together the marinade ingredients in a large, closeable container large enough to also hold the chicken pieces. When marinade is thoroughly mixed, add the chicken, close container and refrigerate until morning.

In the morning place the chicken in the slow cooker on low and cover. 6 to 8 hours later, turn the cooker to high. About an hour later, saute the sliced mushrooms in the margarine or butter. Then add the mushroom (with pan juices), mandarin sections, green pepper and ginger into the slow cooker and stir thoroughly. Mix together the cornstarch, milk, cold water, then gradually add into the slow cooker while stirring until the entire mixture thickens a bit. Re-cover the slow cooker and let simmer for 15 to 30 minutes until serving. Serve with baby carrots and small new potatoes.

Baby carrots is the product I can't see at all around. This recipe is 'high class' and it's for the people, who have good cooking skills. 8)

Baby carrots aren't really young carrots. It's marketing foolishness. Carrots weren't selling all that well and some guy came up with a way to use partially broken and damaged carrots as well as make them sound attractive. All baby carrots are, is pieces of carrot, cut and ground down to a uniform size. With marketing it became a fad.

I make marinades all the time for soaking meats in for a while. Typically I mix them, put them in a  ziplock bag, put the meat in, and put it on a plate in the fridge. Every so often (when I think of it) I'll flip the bag.

Sauteing vegetables is a very basic cooking skill. Lots of them require this as a step in preparation. The slowcooker is an appliance. It is made to put food in and forget it till time to take it out. It doesn't get really, really, hot like a stove top or oven would. It's an excellent way to tenderize tough meats, with long cooking times.

I'm not a chef but I'd think nothing of tackling this recipe as far as making it goes.
