Dried Tofu with Mushrooms
Simple but tasty. It's good for health to eat more mushrooms.

3 slices of dried tofu, cut into small cubes
5 mushrooms, cut into small cubes
a small bunch of coriander, chopped
green onion, chopped
some green and red pepper, chopped
vinegar
soy sauce
corn oil
salt to taste
Boil dried tofu and mushrooms for a while and then drain them.
Heat the pan with oil, saute green onion, tofu and mushroom for 1min, then saute in peppers, soy sauce, vinegar and salt. When it's almost ready, add in the coriander and mix them. Serve hot.

Sweet-potato Pastry with Bananas
This sweet potato pastry is very good for stomach. And it's better to eat it with lemon honey drink( put lemon slices into hot water and add some honey).

2 sweet potatoes
1 banana
3 tbsp of glutinous rice flour
1tsp of sugar
2 tsp of milk
oil
salt
Peel and steam the sweet potato then mash. Sift sugar, salt and glutinous rice flour and mix to a dough ball.
Cut the banana.
Take some from the dough ball and make a small round cake, put one piece of banana in the middle, wrap up and press it a thinner pastry.
Heat the pan with oil and fry the pastry till golden brown.

Chinese Potato Salad
Chinese style potato salad. Easy to cook and very tasty. If you like, you can also fry the potato to be crispy then make the salad, it will be more tasty.

1 potato, shreds
half purple onion, shreds
1 red pepper, shreds
1 green pepper, shreds
1 tsp soy sauce
1tsp chili sauce
1 tsp vinegar
oil
salt to taste
Boil the potato shreds for 2 minutes and drain. Put all the vegetable shreds into a big bowl.
Heat the oil, soy sauce, chili sauce, salt. Remove from the heat and add in vinegar.
Mix the vegetables in the big bowl with the seasoning well.

I like colorful dishes, they can make me feel better. And of course, they are mostly tasty.

1 tomato,diced
100g peas
100g corns
100g Chinese yam, peel and diced
sunflower oil
salt to taste
Boil peas, corns and yam for 3 minutes and drain. Then mix them with tomatoes and add in oil and salt to taste.

Braised Spring Bamboo
Now it's the season to eat spring bamboos. They are very fresh and crispy. This recipe is very simple, but it's very tasty. My husband only tried 3 pieces but already asked to buy again. 8)

300g bamboo
1 tsp green onion
1 tsp soy sauce
half tsp dark soy sauce
half tsp sugar
a little white pepper
sunflower oil
salt to taste
Cut the bamboo into thick pieces. Boil the bamboo for 3 minutes and drain.
Heat the pan with oil, saute half green onion and all the bamboo for 1 minute. Saute in salt, soy sauce, dark soy sauce and sugar. Add half bowl of water and cook for 5 minutes over moderate heat until the sauce become thick. Then add a little white pepper and green onion and it's ready. Serve hot.

Sichuan Flavor Eggplant Salad
This is from Sichuan cuisine. I used pepper pickles and ginger pickles from Sichuan to make it. Maybe you will think Sichuan cuisine is hot, but it's not very true. Some of them are not hot like this eggplant dish.

2 long eggplants
20g pepper pickles, chopped
20g ginger pickles, chopped
20g garlic, chopped
2tsp vinegar
1 tsp sugar
1 tsp green onion
oil
salt to taste
Cut the eggplants into strips and steam for 8 minutes. Then wait them to be cool and put in a plate.
Put all the pepper, garlic and ginger into a bowl. Heat some oil and pour in the pepper. Until it's hot, mix in salt, vinegar and green onion.
Mix the flavoring with the eggplant in the plate.

Red Rice Porridge with Rose
Very healthy porridge with some kinds of rice and rose. They said that girls can be more beautiful and healthy to drink this porridge.

60g black rice
60g coix seed
30g millet
30g rice
8 dry roses
brown sugar to taste
Soak the black rice and coix seed over a night.
Soak the roses for 2 hours.
Cook the black rice, coix seeds,millet and rice with water for around 50 minutes until it's thick.
Then mix in the roses. Mix in the brown sugar and take away from heat. Cover for 20 minutes.

Cabbage Salad with Walnuts
I don't eat uncooked vegetables often. My husband says it's healthy to eat more. I like cooked cabbage, but this salad is also very tasty.

How to cook:
2 cups of purple cabbages,thinly sliced
2 cups of green cabbages, thinly sliced
1 cup of onion, sliced
50g walnuts,coarsely chopped
30g sun-dried tomatoes
10g dried cranberries
1/2 cups of apple vinegar
1 tsp sugar
2tsp olive oil
salt to taste
Mix all the ingredients in a big bowl well. Cover and refrigerate about 3 hours before serving. Stir and drain off liquid before serving.

Potato Cakes with Walnuts and Broccoli
Easy and tasty again.

1 middle potato
50g walnuts, finely chopped
2 cups of broccoli florets
1 small onion, chopped
1 clove of garlic
1 tsp mustard
oil
black pepper and salt to taste
Peel the potato and boil for 20 minutes. Then mash it.
Boil the broccoli for half minute and drain.
Mix potato mash, broccoli, onion and garlic, and add in black pepper, salt and mustard, mix well.
Make the potato mash into small potato cakes. Place a 10-inch skillet over medium heat and wait about a minute. Add the oil, and swirl to coat the pan.
When the oil is hot enough , fry the cakes (in batches, as space allows) for about 5 minutes on each side, or until golden and crisp all over.

Walnuts and Asparagus Salad

250g asparagus
50g walnuts, coarse chopped
30g dried tomatoes
8 olives, sliced
2 tsp apple vinegar
olive oil
salt to taste
How to cook:
Remove the old part of asparagus, cut into 2cm long and blanch.
Heat the pan with a little oil and saute for a while. Add in asparagus, dried tomatoes and olives. Mix well with vinegar and salt.
Ready and serve.

Banana-walnut Shake
Very tasty.

1 banana, ripe
35g walnuts
200ml yogurt
1 tsp honey
To make a frozen banana, peel and cut the banana into chunks. Wrap in plastic and place in freezer 20minutes.
Place banana, yogurt, walnuts, and 1 tablespoon honey in a blender.
Blend on low speed until ingredients start to mix together. Then increase to high speed and blend until smooth.

How to cook:
150g Catepillar Mushroom
150g Kelp Salad
1/2 green pepper, shreds
1/2 red pepper,shreds
1tsp soy sauce
1 tsp oyster sauce
2 tsp apple vinegar
1 tsp mushroom paste
oil
salt to taste
Blanch Catepillar Mushroom and Kelp, drain. Mix all the ingredients in a big bowl, mix well.

Fried Tofu with Bitter Melon
Fried tofu is tasty and it's good to eat more bitter melon in summer.

How to cook:
350g tofu, cut into pieces
100g bitter melon, sliced
50g beansprouts, remove the roots
1/3 red pepper, sliced
1tsp soy sauce
1tsp oyster sauce
1tsp vinegar
oil
salt to taste
Mix bitter melon with some salt and leave it for 15 minutes.
Heat the pan with oil and fry tofu until it's golden.
Saute the bitter melon and beansprouts for 1 minute, and add in fried tofu. Then add in the sauce and salt.

Sichuan Style Fried Cabbage

How to cook:
1 cabbage, ripped apart
3 cloves of garlic, sliced
8 dried red peppers
20 Sichuan peppers
oil
salt to taste
Heat oil and fry the Sichuan peppers, red pepper and garlic, add the cabbage and fry for some minutes, then add salt to taste.

Bitter Melon with fermented soya beans

Fried Banana Rolls with Oats

50g oats
20g corn starch
1 egg
peanut oil
Peel and cut bananas into 3 rolls.
Paste the banana rolls with corn starch, then put them in the egg, then glue with oats.
Put all banana rolls in the hot oil and fry till golden.

Colorful Porridge
I use 5 kinds of rice for this porridge including black rice, red rice, brown rice, cutmaize and coix seeds.
Put all these in the water for 1 hour, then move them all in the electric pressure cooker and add enough water.

Very simple to cook it.

Cut tofu into small thin square and fry in the oil till golden . Then put in the pot with some soy sauce, sugar, salt, 2 star anise and water covered tofu, cook for 30 minutes with low heat.

Mushroom and Green Soybean
Simple but tasty. Only use crab flavor mushrooms and green soybeans with some garlic , peppers.
Put the mushroom in salty water for 10 minutes then wash well.
Boil green soybeans for 5 minutes.
Heat the pan with oil , and fry mushrooms, soybeans and peppers for a while, then add soy sauce and salt to taste and it's ready.

Boiled Peanuts with Carrot
Simple, but I like to eat. And it's also easy to cook.
Put the peanuts in the water for half an hour. Then boil them in a pot with soy sauce, salt, sugar, Chinese cinnamon, star anise for around 30 minutes. Then add in carrots and celeries to cook for 2 minutes.
Remove all out in a big bowl, add some sesame oil to taste.

Often I stir-fry mushrooms with some other things. But this time I bake in the oven and also very delicious.

Vegetable Salad with Lemon Seasoned Salad Dressing
I had a prize with a set of soy sauce, including a bottle of lemon seasoned salad dressing. I used it to make vegetable salad, it's very tasty.
I make the salad with shredded carrots, shredded cucumbers, rice noodles, corianders, mix them with salt and lemon salad dressing, then heat the oil with Sichuan peppers and dried red peppers. (And then, mix the salad again.)

Red Dates with Sticky Rice
It's very nice to be a snack or desert.

Boil the beans for a while. The peanut butter is very thick, add some soy sauce ,garlic and some water. Then mix the bean with the peanut sauce.
