Chives Sauted with Smoked Tofu

Very simple but tasty.
It's better to eat more chives in spring. This time I cook them with smoked tofu. Only soy sauce, salt and oil for taste.

Vegetable Salad

This is the salad I ate today.
There are some kinds of vegetables in the salad, then just mix them with the fine herbs salad dressing. It's very easy but with good taste.

Eggplant Salad

Very nice salad but it's simple. Grilled eggplant, cherry tomatoes  and coriander. For the dressing, I make it with garlic, mint, red wine vinegar, olive oil and salt.

Asparagus, walnuts, dried tomatoes, olivies.
For the taste, salt, olive oil, apple vinegar.

Potato Pancakes with Sauerkraut

My potato pancakes with sauerkraut. I think they are very very nice. I like the taste. I mix mashed potatoes with bell pepper, carrot, onion,sauerkraut and some young leeks. For the taste very simple, salt and black pepper.

Lemon Tea

Some people like to drink coffee to refresh themselves. But I don't like coffee so much.
I think this lemon tea is also very good for this.
Except lemon, there are some Chinese wolfberries and dangshen, a kind of Chinese herbs. Then you can add some honey or rock candy if you like.

Bean Sprouts and Mushroom Salad

Bean sprouts, mushrooms, red pepper, leak, corianders. Garlic, soy sauce, salt and oil for dressing.

Hot and Sour Young Lotus Root

This dish is from young lotus root, we call them ”藕带“. In China, the biggest planting place for lotus roots is Hubei province. Because these young roots grow very fast, they eat them in many ways, but only in May to August.
It's very easy to cook. The taste for this is hot and sour, with chili and vinegar, and young roots are very crispy. That makes me want to eat more and more

A 100% vegan sushi

  A 100% vegan sushi -- home-made sushi with takuan (or danmuji) and cucumber. What's takuan/danmuji? Well, takuan (Japanese: 沢庵; also spelled takuwan), or takuan-zuke (沢庵漬け), known as danmuji (단무지) in the context of Korean cuisine is just is a pickled preparation of daikon radish.

Shredded Cake with Peanut Butter

Shredded Cakes originated in Taiwan. But now they have something changed.
Maybe many people like to eat bread with peanut butter. I don't like bread so much. I made these shredded cakes with peanut butter. Very tasty!
The peanut butter is from New Zealand. It's made of peanuts without any additives.

Lotus Root Slices with Pickled Peppers

It's a very simple dish.
Cut the lotus root into slices, boil for 2 minutes and  drain.
Then add some pickled peppers, apple vinegar, salt and a little sugar. Mix with the lotus roots.
Cover and put in the fridge for 2 hours.

Beans with Peanut Butter

Very simple.
Boil the beans for a while. The peanut butter is very thick, add some soy sauce ,garlic and some water. Then mix the bean with the peanut sauce.
