Seafood in Hainan - Hele crab


Hele crab is one of the traditional most prestigious dishes in Hainan. Produced in the seaside region around Hele Town in Wanning County, Hainan, so go the name Hele crab.

Hele crab has rich, meaty flesh rarely found in other species. Particularly special is its golden yellow fat, which is the same colour as the yolk of a salted duck egg with a fragrant aroma and rich nutritional content. There are many methods for cooking Hele crab, steamed, boiled, fried, grilled, all are unique,perhaps the most common is to first steam the crab in broth then serve with a dipping sauce made from ginger, garlic and vinegar seasoned with condiments which highlights the delicious original flavours.

Compared to inland species, the Hele crab has two special characteristics. Firstly, a thick layer of fat covers almost the whole of the inside of the shell. Moreover this fat is harder and present in greater quantities. Secondly, Hele crab has superior quality flesh to that of inland species and there is more of it. The Qukou blue crab, the Sea crab and the Lingshui flute crab (a straight walking species) are also well known Hainan species.

Dongshan Lamb


It's one of the four famous dishes in Hainan. Because of its unique characteristics, Dongshan lamb does not have the muttony smell of its northern counterparts. These animals spend a long time on mountain ranges leaping from place to place and thus are in excellent physical condition making their meat rich and nutritious. Each lamb weighs around 30-45 Kg and they have a short, squat stature due to their diet of Lingzhi mushrooms, Zhegu tea plants and other rare vegetation that covers the Dongshan mountains. Because the Dongshang lamb nibble their food for a long time, soup made from their meat has a soft, dense flavour and no muttony smell. Since the time of the Song Dynasty (960-1279), Dongshan lamb has enjoyed a famous reputation and in feudal times was part of the tribute payable to the Emperor. The meat’s special characteristics are its golden yellow colour, pleasant appearance when served, its soft and high quality  meat and mouthwatering flavour. Wenchang Chicken


This ranks amongst China’s top chicken dishes and is an island speciality. In Hainan, people say, “No Wenchang chicken, no banquet!”. Poached by warm chicken broth, the chicken is tender and tasty.

The authentic Wenchang Chicken is made with carefully selected chicken. The chicken are fed with particular food, like coconut powder, peanut biscuits or rice grain to make the meat tenderer, the skin crisper, and the bone softer.

Because of this diet, white fillets of Wenchang chicken are the most well known serving method although it can also be broiled in coconut milk or barbequed and so on. The white fillet processing method and seasonings both have unique characteristics. Wenchang chicken would also be bolied and chopped into small pieces and the smell is very tempting. Dipped with tea oil, ginger paste, salt and other spices, the chiken meat tastes amazingly delicious.
