Muffins

Ingredients

5 c flour
1 tsp salt
3 c sugar
1 qt buttermilk
1-15oz box Raisin Bran
4 eggs
5 tsp baking soda
1 c melted shortening

Directions

Mix by hand. Store batter in refrig up to 6 weeks. Spray muffin pans with
Pam, fill 3/4 full and bake at 400 degrees for 12-15 minutes. Freezes well

I rarely go buy buttermilk. My substitute is 1 cup of milk with 1 tbs of lemon juice or vinegar. Stir and let sit for 5 minutes. I probably do this once a week or so for making cole slaw.
