Coconut Chicken Soup

It's a kind of very local soup in Hainan, China. Here there are a lot of coconuts you know. The coconut drinks here are very popular too.
When you eat in a local restaurant, it's sure you can try the coconut chicken soup. There are some kinds, original taste or add some other kinds of things like mushroom.
I cook this soup without any water. Two big coconuts, some chicken. Pour out the coconut water inside, also use some coconut flesh, boil them for a while then add the chicken and cook some minutes. Only salt for the taste. Very natural.

Colorful Salad

Today salad for lunch. To make salad is simple and fast.
Cherry tomatoes, lettuce, quail eggs, bell peppers, onions with Italian salad dressing.

Silk Noodles with Shrimps and Quail Eggs

It's a very easy lunch. Prepare quail eggs, silk noodles, luffa and shrimps. Then put them in the boiling water to cook for a while. Only salt and oil for the taste.

Spring Bamboo with Shredded Peppers

Bamboos, black fungus, peppers are all shredded. Then saute them all in the pan, only some salt, oil and oyster sauce for taste.

Kelp Salad

This salad  is very nice, including kelp, shredded peppers and worm grass flower. Worm grass flower, we call it 虫草花, is a kind of artificial planting mushrooms. For the sauce, I made it with salt, oil, soy sauce, oyster sauce and soya paste.

Chives with Clam Meat

Simple but nice. Only chives and clam meat. I like food with a little spicy flavor, so I use two hot chili. And soy sauce, salt and oil for the taste.

Spaghetti with Kimchi

Do you ever try spaghetti with kimchi? If you like kimchi, you will like it.
Except kimchi, I use mince, green onion. It's really nice, you can try.

Calim Soup with Needle Mushrooms and Kelp

This soup is very simple and doesn't take much time to cook. But it's very nice.
Three main things: clams, needle mushrooms and kelp. Boil clams to open then add the mushrooms and kelp to cook for around 5 minutes. Only a little shredded ginger and some green onions, salt and oil for the taste.

Braised Young Luffa Vine in Broth

Now I can see very young luffa vines in the market. I like to eat them.
To braised them in the broth is a very nice way. First blanch the young vines. Then make some broth with mince, preserved duck egg, ginger, garlic and a chilli if you like. Then pour the broth on the vines. Very easy!

One-pot Rice with Chick Pea and Bell Peppers

This is the rice I cook today. I like one-pot rice very much.
In the rice there are many kinds of vegetables. This time I add bell peppers, chick peas,onions and some sausages.

Tuna Fish Salad

My salad today.
Canned tuna fish, potatoes, quail eggs, onions, Cherry tomatoes, asparagus and young Chinese cabbage.
For the dressing, salt, oil, black pepper and lemon juice.

Chicken Salad

My chicken salad. I grilled two chicken legs. Then make salad with some other vegetables and nuts.
It's very nice.

Steamed Bun Sandwich

This sandwich is not about toast. I use a steamed bun, that we call it MANTOU, to make the sandwich.
Cut the mantou into pieces and brush some egg then bake, the pieces will be kind of crispy.
Inside the sandwich, there are cucumbers, French sausages and  gherkins relish.

Rice Hamburger

My rice hamburgers today.
In fact I don't like hamburgers so much. The hamburgers outside can't attract me at all.
Today I make some hamburgers at home but I use rice
I fry the rice cake to be crispy first, Then make hamburgers with meat balls and vegetables. With the gherkins relish, the rice hamburgers are very tasty.

Salt and Pepper Shrimps

My dish for lunch today.
This dish is Cantonese. I like it very much. After fried in the oil, the shrimps are very crispy but the meat is still soft and fresh. Very nice taste.
