Crab Casserole

Crab Casserole

Ingredients

1/2 c celery, fine chop
1/2 lg green pepper, chopped
1/2 c green onion, chopped
1 tsp parsley, dried
1 lb crab meat
1 1/4 crackers, crushed to crumbs
1/3 tsp dry mustard
some dashes of Tabasco
1/4 c heavy cream
1/4 c butter, melted

Directions

Divide cracker crumbs in half. Mix one part of crumbs with ingredients in large bowl. Butter baking dish and pour mixture into dish. Cover with remaining crumbs. Bake at 350 F for 30 minutes.

 I'm glad to see that you're posting here a new recipe (one of Mojo's powerful sides is the unique-and-big collection of recipes, if someone didn't know yet).
 We already tried another of your recipes (posted here) and here is the photograph. :)
 On-topic: I like only a few kinds of meat and the crab meat is one of them. And what's heavy cream?

I looked at your excellent photo of the Cole Slaw earlier before you mentioned it. I had not made comment on it yet but did see it.

Here in the US, milk is processed. Much of the fat and cream is removed from the milk before it is sold, along with the homogenizing and pasteurization process to kill bacteria that could make you sick. So making cream is not possible from milk products bought in the store. You have to buy cream separately from the milk.

 Good. I wanted to make it sure, you didn't miss it, because it's a part of our respect to you. :) (The photo isn't one of the most excellent, because she was in hurry and we arranged it only with a new can of beer; simple, but comparatively lovely photo. The coleslaw is in my favorite Japanese style black bowl. It's very convenient, because the chopsticks can't drop, when you put them on the right places of the bowl. I use more forks, than chopsticks, but it's also convenient for forks and spoons. :)
 Next time, when we cook something else from the recipes you share, I'll try to arrange it better.)

I've often stated that a recipe is not a 'must follow' blueprint. The idea that you don't have all the called for ingredients doesn't mean you can't make it. It's your taste buds, your wallet, and your time.

We always use recipes as a guideline, maybe we have that ingredient, maybe not. One of the disadvantages of a small town is you can't just up and run to the store that specializes in seafood or ethnic such as Asian to get those proper ingredients. it's a matter of being limited to what is available in one or two stores. So you do with what you have.

 This is what I often speak -- we don't need to follow on 100% a certain recipe, we can modify it at home, but, of course, in a way that isn't bad for our health. Eat healthy! :)

 It's ready.The picture is ready too. Later on, we'll upload it. I ate it. I like it. But I think I prefer it without the crackers. In fact they're tasty Korean crackers. But I like them without any cooking. So, next time I want to try this dish again, but it will be without crackers. :P

Sometimes crackers work, sometimes they don't. I've a recipe somewhere for a baked bean casserole that uses crackers as the body in the recipe and that one turns out fairly good. Others, like you mention, might depend on the cracker type as well as to how fine the they are crumbled. Even then, sometimes they don't work.
